Refreshing, that’s le mot du jour…

Refreshing to be finally warmer..

Refreshing to be nearly out of this pandemic, fingers, legs, and arms crossed. 

Refreshing to be able to meet up family and friends and very very refreshing is my secret kiwi summer watermelon salad.

This is a show stopper, that looks and tastes great.

People are intrigued at first by the combination, finding it a little weird, but they soon learn to love it.

You need:
1 cup pumpkin seeds,
60ml extra virgin olive oil,
1.5 kg watermelon,
300g sheeps feta,
Crushed black pepper,
3 juicy lemons.
Toast the pumpkin seeds in a pan or oven with a drizzle of olive oil.
Cut the watermelon in to chunks and put on a pretty plate with sides.
Drizzle the olive all over.
Crumble the feta over the top ,
Sprinkle the seeds over and the black pepper,
Then drizzle the lemon juice over this.
And serve with lemon wedges for colour.

(These measurements are for a big plate so just half it for a candlelit midnight dinner for two!)

I actually do a layer of watermelon, pepper, lemon juice and then repeat adding the feta, seeds and wedges last.

Put it in the fridge for an hour or so before serving and the watermelon seems to soak up the olive oil.

Add vodka if you want to have the best BBQ, midnight dinner or party ever!

And lastly so refreshing to see everyone again, two months in next week and nearly on round 2.
